Join Diane Carlson, Founder and Chef/Instructor of The Conscious Gourmet on a journey to become a natural foods culinary instructor. Through knowledge, instruction, application and feedback, you'll gain confidence in your ability to assist others in their quest for a healthier style of eating. The CICP offers training in health supportive cooking, teaching skills and nutritional paradigms for conscious food choices. Gain step-by-step models and maps for teaching classes whether in your own home, a client's home, rented kitchen, formal culinary classroom, or practitioner's office--all requiring different organizational skills, teaching models and presentation skills. LEVEL I TRAINING (5 days) Diane will focus on healthy meal preparation with culinary presentations demonstrating techniques for preparing whole grains, legumes, sea vegetables, cooked greens, salads and dressings, fresh seafood, and naturally sweetened desserts, all free of wheat, dairy and refined sugar. You will discover how to stock your pantry and equip your culinary classroom for single recipe demonstrations to full meal menus. You will learn to develop class objectives, create craving free-nutritionally balanced menus, select recipes; set up and manage an optimal learning environment; communicate effectively with an audience for inspiring and dynamic classes; find appropriate venues and market classes. Theory classes will introduce you to the nutritional models underlying The Conscious Gourmet classes and how to apply the principles. Models include: Intentionality, Law of Opposites; pH Balance; Allergy Addiction Cycle; Ayurveda and Five Phase Chinese Dietary Theory. We will explore the connection between food, mood and health; how to select foods according to individual body type; manage cravings; increase energy, cope better with stress and generally improve health through conscious food choices. You will be able to empower your students to think about food in a whole new way. Class assignments will begin before the Level I and II program and include mind maps, essays, reading assignments, a written book review and 10 minute class presentation; menu plans, objectives and recipes, class critiques and culinary skills practice. LEVEL II TRAINING (5 days) In the Level 2 training, we will go beyond the demonstration class to expand your class offerings by practicing additional teaching methods to support the various learning styles of your students. You will be immersed in the hands-on preparation of health-supportive full meal menus from soup to dessert as well as specialty menus. You will experience how each method differs in their classroom requirements; set-up, organization, and navigation; and how the participation of the instructor and student differ in each method. You will have the option to present a full meal menu demonstration class, one of the requirements for The Conscious Gourmet certification. Diane and your classmates will critique your class, offering valuable feedback using specific evaluation criteria. It will be the most challenging and beneficial class in your new career! CERTIFICATE OF COMPLETION REQUIREMENTS To receive a Conscious Gourmet certification in The Culinary Classroom Instructor Program, participants will be accountable for the information taught in both Level I and Level II by demonstrating expertise through class participation; comprehension and completion of class assignments; receiving a "pass" grade on a final exam, and presentation of a single recipe demo and full meal menu demonstration class. Level I and Level II are intensive programs and must be taken in that order. Skills practice between the levels is recommended and necessary. Classes run 8:30 a.m. to 5:00 p.m. and may require some evening classes and time for the completion of class assignments. FOOD PHILOSOPHY Class menus include the preparation of the highest quality mostly vegetarian foods, both cooked and raw, including whole, fresh, natural, seasonal, REAL FOOD, organic whenever possible. While this is the food philosophy of The Conscious Gourmet, teaching skills may be applied to any other dietary approach.
