Located 50 miles north of Albuquerque and just 15 minutes South of Santa Fe, The Inn at Sunrise Springs sits in the rich Rio Grande Basin, surrounded by the Sangre de Cristo mountain ranges. Built around two spring-fed ponds, the grounds are home to cottonwood, willows and abundant gardens—truly an inviting and serene desert oasis for our culinary retreat in the Land of Enchantment. CORE PROGRAM AGENDA An itinerary will be sent upon receipt of retreat deposit
The program begins on Sunday at 4:00 p.m. with orientation, Lecture/ Workshop, and welcome dinner.
Yoga/Meals
Most mornings begin with yoga/movement class followed by a whole foods breakfast buffet. All cooking classes include a delicious full course organic meal. Dinners are provided Sunday and Thursday evening.
Culinary Classes
Daily four-hour demonstration and hands-on cooking classes include the orchestration and preparation of delicious health-supportive meals from soup to dessert using the highest quality, organic ingredients available—free of the most common allergy producing foods such as wheat, dairy and refined sugar. Menus include both raw and cooked foods.
Before each of the five cooking sessions, we’ll practice a quick and easy exercise to center and focus the group. Diane will review the daily menu and together we’ll create a master plan or map to guide you through the menu preparation, plus time saving steps for your success in the kitchen.
We’ll go over each recipe in detail introducing you to their health-supportive ingredients such as grains, beans, natural sweeteners, high quality oils, condiments and a variety of staples--why we use them and the resources available for stocking your own pantry. Then we’ll head for the kitchen where you’ll begin cooking in small groups under Diane’s expert guidance.
In each session, we will also practice
- honing your knife skills
- the art of seasoning
- fundamental health-supportive culinary techniques for preparing delicious organic meals including:
- appetizers
- non-dairy “creamy” soups
- salads and vinaigrettes
- grain, bean and pasta dishes
- seasonal vegetables
- calcium rich greens
- and mouth-watering dessert
One meal will include fish as well as a vegetarian option. Following each cooking class, you will feast on the gourmet meal you’ve prepared to experience the satisfying results. You’ll go home with tips and techniques for a lifetime of healthy eating and enjoyment for yourself and your entire family.
Lecture/Workshops
In these eye-opening workshops, you’ll discover a whole new way to think about food and how to make conscious food choices that support your personal goals.
You’ll discover how to:
- connect the dots between the food you eat and what you experience physically, mentally, emotionally and spiritually
- use the Three Levels of Food Consciousness, the use of Intention, and how to become a conscious gourmet
- understand a variety of diets and how they apply to your particular constitution
- use models such as expansive/contractive, acid/alkaline and Five Phases from Chinese medicine to identify and eliminate food cravings for nutrition deficient food; the connection between food and mood; and how to create menus that maintain a healthy Ph for maximum nutrition and weight maintenance
- prepare meals that balance YOU and leave you free of cravings and food binges
- break the food allergy/addiction cycle and eliminate the toxic bloat we call fat that accompanies it
- identify the underlying health conditions that often sabotage our best efforts to maintain a health supporting diet
- select and use high quality fats and oils, and the use of Omega 3’s
- use the ABC’s of menu planning for creating both vegetarian and non-vegetarian meals and how to use leftovers creatively
- use both local and Internet resources for health-supportive foods, condiments, staples and more!
You will receive a Conscious Gourmet apron and binder filled with recipes, numerous handouts and resource lists to support your continued learning. Knives are supplied for your use during class and will be available for purchase.
Free Time
Most afternoons are free to explore your vacation destination’s unique offerings on your own or with the group. Opportunities abound for sight seeing, hiking, shopping and gallery browsing or relax into a spa service at the retreat site or surrounding area. During your free time, explore the Inn's nearly 70 lush acres surrounding spring fed ponds with walking paths and gardens, relax in their Junior Olympic outdoor heated pool or Peace Lodge Sauna, or treat yourself to any of Spa Samadhi’s menu of services from around the world including therapeutic massage, body treatments and facials. Sunrise Springs also offers authentic Japanese tea gatherings, clay workshops and much more!
Group excursion to Bandelier National Monument
Following class on Wednesday, we'll journey to Bandelier National Park in Los Alamos to visit centuries old ancestral Pueblo sites, best known for mesas, sheer-walled canyons, and several thousand ancestral Pueblo dwellings found among them.
We'll walk the Main Loop (self-guided) Trail, starting at the Visitor Center and leading through excavated archaeological sites and a spectacular (very safe) climb by ladders to a ceremonial kiva (visit our Photo Gallery for photos of a previous Santa Fe retreat visit).
On our picturesque return trip, we'll have dinner (optional) in Santa Fe’s Café Pasqual, one of the first to blend traditional Mexican cooking with the flavors of Asia; and one of the first to make a commitment to use only organic eggs and naturally-raised beef, port and chicken and line-caught fish—some of the best food the Southwest has to offer.
On Thursday, preceding our 3:00 cooking class and lecture, you’ll have additional time to explore the Land of Enchantment. Santa Fe (just 15 minutes away) and Taos (approximately 1 hour) offers visits to marvelous museums and galleries, sophisticated shopping, and creative cuisine. For a further adventure, explore the unique culture of New Mexico and drive the High Road to Taos with its awe-inspiring scenery, legendary towns like Chimayo, and Taos Pueblo.
Dinner
Dinner is included on Sunday and Thursday evening. For additional meals, the Inn's famous Blue Heron Restaurant, features American cuisine with an Asian flair, using the most natural ingredients possible, many of which are grown right at the Inn. The chef's at The Blue Heron Restaurant are said to have created...”a culinary vision that focuses on mind, body and spirit, bringing balance with their innovative cuisine, ultimately creating a marvelous dining experience”. Participants may also choose to venture into Santa Fe to experience any of its fine restaurants representing diverse cultures as well as the best (and most flavorful) Southwestern food ever experienced!

A non-refundable $250 deposit reserves your space. One-half the remaining program fee is due 90 days before the retreat start date, with the remaining balance due 60 days before retreat start date. Registration 59 days or less before the start date requires payment in full.

Additional tours or services are available at the participant's option and expense. If you choose to participate in activities outside of the group itinerary, no deductions, allowances or substitutions will be made.
A rental car is recommended for maximum flexibility, however, shuttle transportation from the airport, as well as shuttle service from The Inn of Sunrise Springs to Santa Fe is available for a fee. Once the retreat has begun, participants often carpool.

We will reserve your room for you. A major credit card will be needed upon check-in for your room charges. If you would like a roommate to share double accommodations, please indicate this on your registration and we will do our best to arrange this for you.
