Located 50 miles north of Albuquerque and just 15 minutes South of Santa Fe, The Inn at Sunrise Springs would have to be described as perfectly sited in the rich Rio Grande Basin and surrounded by the Sangre de Cristo mountain ranges. Built around two spring-fed ponds, the grounds are home to cottonwood, willows and abundant gardens—truly an inviting and serene site for our culinary retreat in the Land of Enchantment.
PROGRAM ITINERARY
The program begins on Sunday, 4:30 p.m. with orientation, welcome dinner at the Inn's own Blue Heron Restaurant, and Introductory Conscious Gourmet Workshop.
Mornings
Yoga/Breakfast
Early morning yoga from 7-8:15 a.m. on Monday, Tuesday and Thursday with daily whole foods breakfast buffet.
Cooking Classes and Lunch
Four-hour hands-on health-supportive cooking classes including the preparation of delicious menus from soup to dessert using the highest quality ingredients--organic when available. You'll practice knife skills and culinary techniques for preparing a variety of appetizers, soups, salads, dressings, whole grains and pasta, beans, fish and organic or grass fed animal protein dishes, seasonal vegetables, calcium rich greens, and mouth-watering desserts free of refined sugar, dairy and wheat. Afterwards, we'll feast on the gourmet lunch you've prepared to experience the satisfying results. (A vegetarian option will always be provided.)
Afternoons
Free Time
Afternoons are free to explore the Inn's nearly 70 lush acres surrounding spring fed ponds with walking paths and gardens, relax in their Junior Olympic outdoor heated pool or Peace Lodge Sauna, or to experience the magic of any of the optional (additional fee) Samadhi's treatments from around the world including Thai Massage, Lomi Lomi, Hot Stone, Sacred Anointing, or energy treatments such as shiatsu, Reiki, Cranial Sacral Therapy, and Polarity. The Inn also offers an array of aesthetics like KoBoDo (a Japanese facial massage, Spa manicures and pedicures and Egyptian Sugaring (a natural and effective gentle hair removal) and more!
Also available are Tai Chi, Chung, Japanese Tea, Sweat Lodge, Reiki, Pottery making, Medicine Wheel, Mindful Painting Spirit Journeys, and Astrology for transformation.
Santa Fe is just 15 minutes away for visits to marvelous museums and galleries, sophisticated shopping and creative cuisine!
Wednesday
Group excursion to Bandelier National Monument
Following breakfast, we'll journey to Bandelier National Park in Los Alamos to visit centuries old ancestral Pueblo sites, best known for mesas, sheer-walled canyons, and several thousand ancestral Pueblo dwellings found among them.
We'll walk the Main Loop (self-guided) Trail, starting at the Visitor Center and leading through excavated archaeological sites and includes a spectacular (very safe) climb by ladders to a ceremonial kiva (visit our Photo Gallery for photos of a previous Santa Fe retreat visit).
On our picturesque return trip, we'll stop in Santa Fe for a late lunch at The Coyote Cafe Cantina and an afternoon of shopping and gallery browsing. You can remain in Santa Fe for the evening or return to Sunrise Springs for dinner at the famous Blue Herron Restaurant.

Dinner
Dinners are on your own (except Sunday and Thursday). Dine at the Inn's famous Blue Heron Restaurant, featuring American cuisine with an Asian flair, using the most natural ingredients possible, many of which are grown right at the Inn . The chef's at The Blue Heron Restaurant are said to have created...”a culinary vision that focuses on mind, body and spirit, bringing balance with their innovative cuisine, ultimately creating a marvelous dining experience”. Participants may also choose to venture into Santa Fe to experience any of its fine restaurants representing diverse cultures as well as the best (and most flavorful) Southwestern food ever experienced!
Lecture/Workshops--Monday, Tuesday and Thursday evenings
A gourmet is a lover of good food , but all too often our daily food choices are based upon familiarity and availability, lack of time, convenience, and ease of preparation. Unaware of the effects of our food choices on our health and wellbeing, we experience weight gain, mood swings, decreased energy and attention levels, and cravings for nutrition deficient food. We unconsciously create food sensitivities, accelerate the aging process and repeatedly make choices that contribute to numerous unhealthy and life diminishing unhealthy conditions.
Our Conscious Gourmet evening lectures will address these issues, including:
- The connection between food and health and how to select and prepare food that supports the life you want to experience--physically, mentally and emotionally
- Criteria for health-supportive foods and how to incorporate them into your daily diet
- The art of creating balanced vegetarian and non-vegetarian meals with the highest level of nutrition possible
- The best fats and oils to use for cooking that also help you maintain or lose weight
- Pasteurized vs. raw dairy products
- Commercial vs. organic or grass fed meats
- How to use intentional eating models to understand and eliminate cravings for nutrition deficient foods such as sugar and white flour products
- How to recognize physical and emotional reactions caused by allergic foods and/or food sensitivities and how to break the allergy/addiction cycle
- Underlying health conditions that often sabotage our best efforts to maintain a healthy diet
- Foods for maintaining a healthy Ph
- New ideas for breakfasts, lunches and dinner
- Food and mood connection
- How to use leftovers to create delicious new meals
- Internet resources for health supportive foods

Program Fee does not include accommodations, airfare, airport ground transportation, meals or beverages other than listed. Additional tours or services are available at the participant's option and expense. If you choose to participate in activities outside of the group itinerary, no deductions, allowances or substitutions will be made.
A rental car is recommended for maximum flexibility, however, shuttle transportation from the airport, as well as shuttle service from The Inn of Sunrise Springs to Santa Fe is available for a fee. Once the retreat has begun, participants often carpool.
REGISTRATION
Registration space is limited to the first 14 deposits. Early registration is recommended to assure availability.
A non-refundable $250 deposit reserves your space. One-half the remaining program fee, $622, is due April 10 and the remaining balance, $623, is due on May 10. Registrations after May 10 require payment in full. A charge card will be necessary upon check-in at The Inn of Sunrise Springs for your room accommodations.

POLICIES
Right to Cancel
Diane Carlson and The Conscious Gourmet reserve the right to cancel any intensive for any reason and will not be held liable for other expenses incurred by registrant in connection with the cancelled course, including but not limited to transportation or hotel expenses. In the event of a cancellation, you will receive a full refund.
If a program is cancelled due to low enrollment you will receive a full refund.
If a program is cancelled after it as begun due to reasons beyond our control you will receive a refund for the difference between the original fee and the value of the portion of the program already completed.
Cancellations and Refunds
Cancellation must be in writing and is effective on date of receipt (e-mail not accepted.) The Administration/Registration fee is non-refundable, however, you may transfer it to a future scheduled retreat one year from cancellation date. You will forfeit the following if you cancel prior to start date:
- $250 Registration/Administration - fee non-refundable
- 60 days prior to start date - 30% of Program Fee
- 31-59 days prior to start date - 50% of Program Fee
- 30 days prior to start date - 100% of Program Fee
NOTE: Instead of cancellation, you may send someone to take your place.
- We do not offer refunds in the event you arrive for the Program late or if you leave early.
- If either a couple or two individuals are traveling together and both cancel their reservations the appropriate cancellation fee applies for each individual.
- We strongly recommend you purchase trip cancellation insurance because we strictly adhere to our cancellation policy.
- We do not offer refunds for any unused portions of the trip you voluntarily decide not to use including meals, sightseeing, tours or transportation.
