PROGRAM CONTENT
You'll feel right at home in Kolealea's
beautiful home-style kitchen as
we join together to prepare a variety
of health-supportive specialty breakfasts,
lunches and dinners, guided
by one of our Chef/Instructors.
You'll learn tips and techniques
for preparing delicious meals, hands-on,
to support the health conscious
life you want to live. A raw
foods cuisine demonstration,
using Maui's abundance of fresh
fruit and vegetables, will
also be included.
In the lecture/workshops,
we'll explore the relationship
between the food you eat (and how
you prepare it for you and your
loved ones), your health, your energy,
your moods, and how to look and
feel your best. You’ll learn
the cutting edge principles of nutrition
and how to become a ‘conscious’
gourmet for a lifetime of good health
and vitality--no matter which diet
or eating style you choose to follow!!
Topics include:
How to stock your cupboards
with the highest quality food
choices for health-supportive
eating and menu planning
Learn to use models such as
expansive/contractive, acid/alkaline,
the allergy addiction cycle, and
Five Phases from Chinese Medicine
so you can choose foods that balance
you and support your individual
goals
Understand and manage your
food cravings
Identify the underlying conditions
that sabotage our best efforts
for maintaining weight, energy,
health and vitality.
Mornings begin
with a yoga or movement class (designed
for all levels of fitness) led by
our talented Nia instructor, Erin
Grau, in Kolealea’s beautiful
meeting hall with natural bamboo
flooring. Some participants may
choose an optional program at the
Haiku gym with personalized fitness
and nutrition experts—Terry
and Kyla Estabrook from Tornoto,
Ontario Canada. We may even have
hula lessons!
Morning workouts will be followed
by delicious island breakfasts.
Afternoon and evening
itineraries will vary to
give you ample opportunities to
explore Maui in a variety of ways,
whether on your own or with the
group. Hike through rainforests
to breathtaking waterfalls with
our guide, Marco Polo; experience
the sliding sands trail of the world’s
largest dormant volcano; relax
on white sand beaches, or visit
the sight of “Jaws”
where waves can reach 40-50 feet
during the winter months.
Some may select optional programs
for whale watching and dolphin sighting
excursions, snorkeling off black
volcanic sand beaches, or a day
trip (on our day off) to the island
of Lani’e. Others may choose
to leisurely browse the numerous
shops and galleries of Pa’ia
or travel to Lahaina. Free time
will also allow you to dine at some
of Maui’s finest restaurants.
The program completes on Sunday,
following breakfast.
ACCOMMODATIONS
Kolealea Retreat Center is located
in a secluded setting in ‘Upcountry’
Maui, just 25 minutes from the airport
and central shopping districts,
and minutes away from the famous
‘road to Hana’. Shared accommodations
offer kitchenettes, some with private
lanais, high ceilings and lofts,
and surrounded by the tropical gardens

The main house of Kolealea
Retreat Center has been
reserved for our group. Program
fee includes shared accommodations,
with a few single accommodations
available at an additional cost
and will be reserved on a first-come,
first reserved basis.

itinerary, menu and instructors
as necessary based on availability.
The Program Fee does not
include the following:
Airfare, ground transportation,
meals or beverages off- site, health
or travel insurance or optional
guided excursions. Additional
services are available at the participant’s
option and expense. If you
choose to participate in activities
outside of the group itinerary,
no deductions, allowances or substitutions
will be made. A rental car
is recommended for maximum flexibility.
Registration/Deposit Space is limited to first
10 deposits. Early registration
is recommended to assure availability.
A non-refundable $250 deposit holds
your space; one half the balance
is due October 24 ; and
the remaining balance
is due November 24.
Registrations after November 24
must be paid in full at time of
registration.

POLICIES
Right to Cancel
Diane Carlson, dba The Conscious
Gourmet, reserves the right to cancel
any intensive for any reason and
will not be liable for other expenses
that the registrant may incur in
connection with the canceled course,
including but not limited to transportation
or hotel expenses. We recommend
you have travel insurance, easily
available through the internet.
If a program is cancelled due
to low enrollment you will receive
a full refund.
If a program is cancelled after
it as begun due to reasons beyond
our control you will receive a
refund for the difference between
the original fee and the value
of the portion of the program
already completed.
Cancellations and Refunds
Cancellation must be in writing
and is effective from date of receipt.
The Registration fee is
non-refundable, however,
you may transfer it to a future
retreat within the next year. You
will forfeit the following if you
cancel prior to start date:

NOTE: Upon notification
of Diane Carlson you may send someone

If either a couple or two individuals
are traveling together and both
cancel their reservations, the
appropriate cancellation fee applies
for each individual.
We strongly recommend you purchase
trip cancellation insurance
because we strictly adhere to
our cancellation policy.
We do not offer refunds for
any unused portions of the trip
you voluntarily decide not to
use including meals, sightseeing,
tours or transportation
Liability
During the course of the Program
you will be using sharp knives and
working in a home-style kitchen.

Gourmet or the Natural Gourmet Cookery
Corporation and/or the Kolealea
Retreat Center assume no liability
for any accident occurring on the
premise or for any accidents that
occur outside the program (hiking,
transportation to/ from your home
before and/or after the program).
We recommend you maintain adequate
medical coverage.
