I invite you to join me in my spacious and well equipped Greenwich home kitchen—perfect for culinary classes, lecture/workshops, weekend intensives and private groups or parties.  Bring a mate, a friend or come on your own and discover how easy and beneficial it is to become a Conscious Gourmet.  

INSTRUCTOR
Classes are taught by Diane Carlson, The Conscious Gourmet Cooking Retreat Travel Program Founder and former Co-President and Director of the Natural Gourmet Institute for Food and Health in NYC. Classes are conveniently held in an easy-to-reach Greenwich, CT location off the Merritt Parkway.

THE CONSCIOUS GOURMET COOKING CLASSES AND LECTURE/ WORKSHOPS

Cooking Classes feature health-supportive organic foods and cooking techniques. Some classes focus on the preparation of complete meals from soup to dessert, while other classes focus on specific subjects such as soups and stews, holiday feasts or mouth-watering desserts. Ingredients are organic when available and include options for many allergy-producing foods such as wheat, pasteurized dairy and refined sugar.

Lecture/Workshops teach the connection between the food we eat and our physical, mental and emotional health. Through the introduction of various models, participants learn how to make food choices that are based on their long-term goals and immediate needs, and whether one's choice serves or sabotages their health and well-being. If your goal is to simply eat more healthfully, or to fine tune a diet you are presently following -- low-carb, vegetarian, raw foods, whole foods or any other diet-- you'll learn how to apply intentional eating principles to consciously choose foods with the highest possible level of nutrition, balance and satisfaction.  

THE CONSCIOUS GOURMET, Level 1
1 lecture/workshop, 1 cooking class

Becoming a conscious gourmet and an educated consumer in today’s food world can be challenging. We are bombarded with a vast array of recommendations, “health products” and terms such as genetically modified, free range, natural, organic, certified organic, raw, grass fed, local and sustainable. What does it all mean and bottom line, how will your food choices contribute or diminish your family’s long-term health and well-being.

In the morning cooking session, we will prepare a complete organic meal from soup to dessert utilizing seasonal organic produce and cooking techniques you will come to rely upon in your own kitchen. You will also be introduced to whole grains, beans, sea vegetables, condiments, oils and natural sweeteners; why we use them and how to incorporate these high quality staples into your daily meal preparation. Afterwards we will dine on the delicious lunch we have prepared so you can experience the satisfying results.

In the afternoon lecture session, we will apply the principles for health-supportive food selection and create satisfying and nutritious meals that balance you and free you of “after dinner” food cravings. We will also discuss the underlying conditions that often sabotage our best efforts for maintaining a healthy diet and how to break free break free of the allergy/addiction cycle and the toxic bloat we call “fat” that accompanies it. Whether dining in or out, you will go home with knowledge you can apply today for experiencing a more healthful and vital life through conscious food choices.

THE CONSCIOUS GOURMET, Level 2
1 session

In this workshop, we will explore the use of various models such as expansive/contractive (law of opposites), acid/alkaline, and the Five Phases from Chinese Medicine as well as the basic principles of nutrition to introduce you to an entirely new way of thinking about food, and how to fine tune your food choices to support your personal goals. We will explore the relationship between what you eat and its effect on your mental, emotional, physical and spiritual being. Diane will illustrate how to use diet as one of the tools to improve the quality of your life, understand and avoid binges and cravings, increase your energy, cope better with stress, manage weight and generally improve your health.

Cancellations must be received 7 days prior to start of class for a full refund.  No refunds after that time.  Someone may be sent in your place.   Diane reserves the right to cancel a class for insufficient enrollment with full refund to participants.
